Chai Chipotle Cocktail Post Exam Party Platter

~ Qty 2- (8oz) package chream cheese, softened
~ 1/2 cup Chai Chipotle Chup Cocktail Sauce
~ Qty 2- (8oz) lump crabmeat drained well
~ 1/2 cup shredded Swiss cheese
~ 1/4 cup chopped green onion
~ 8 (8 inch) flour or spinach tortillas
~ 1 cup additional Chai Chipotle Chup cocktail sauce for dipping

In a medium bowl, mix together the cream cheese and cocktail sauce until well blended.  Stir in crabmeat, Swiss cheese, and green onion.  Spread about 1/2 cup of the mixture onto each tortilla, and roll up tightly.  Wrap each tortilla in plastic wrap, and refrigerate overnight.  Slice rolls into 1/2 inch circles, and arrange on a service tray with a bowl of cocktail sauce for dipping.  Arrange on platter, invite frat friends, and be glad exams are DONE!

Chai Thai Masta’ Pasta – Great Hot or Cold!

~ 1 (16oz) package uncooked linguini flour or wheat pasta
~ 1/2 cup olive oil
~ 1 (9.25oz) container cashews
~ 1 cup Chai Thai Teriyaki sauce
~ 1 cup of snow pea pods
~ 1-2 cups of broccoli
~ 1 teaspoon ground ginger
~ 1 bunch green onions, diced
~ optional 1 cup grilled chicken or shrimp

Bring a large pot of lightly salted water to a boil.  Place linguini in the pot, cook 9 to 11 minutes, until al dente, and drain.  Melt the butter in a large pot over medium heat, and saute the cashews 5 minutes, until lightly browned.  Mix in the cooked linguini, teriyaki sauce, giner, green onion, and any remaining ingredients.  Continue to cook and stir until heated through.  Use this dish to bribe your professor…great in take out containers!

Green Tea Gourmet Salad: Perfect for a quick lunch between Algebra & Psych 101

~ 20oz (2 prewashed bags) of chopped romaine lettuce
~ 1-2 cups Chopped Napa Cabbage
~ 1 cup snow pea pods
~ 1/2 cup sliced red onion
~ 1-2 cups Low Mein Noodles
~ Optional toppers: julienne carrots and red cabbage for color

Dressing: 3/4 bottle of Green Tea Gourmet mixed with 1/2 cup olive oil.  Usa as much/little of the dressing as you want.  Great for tomorrows’s Lab Lunch Date!  Toss & Create a Delectable Salad.

Hot Squared Rice *the teacher*s pet!*

~ 3 tablespoons hot squared
~ 2 cups cooked rice
~ 6oz hot pepperjack cheese grated
~ 1 *11oz* can mexicorn drained
~ 1 can *8.75oz* cream style corn
~ 1/4 tsp salt

Pre-heat oven to 350. Coat 6 cup baking dish w/ spray oil.  Mix all ingredients, sprinkle with a little cheese on top.  Bake 15 minutes, or until you smell heaven.

Shrimpy Chupy Cheese Dip

~ 1 lb. raw, peeled and de-veined shrimp
~ 1/2 C. butter or margarine or olive oil
~ 1/2 C. finely chopped onions
~ 1/4 C. finely chopped sweet red pepper
~ 1 lb. diced American process cheese
~ 1/2 Cup of Chup
~ 2 tsp. sherry

Chop shrimp. In a large mixing bowl combine shrimp, butter and vegetables. Cover and microwave on HIGH for 5 minutes. In another bowl, combine remaining ingredients. Cover and microwave on MEDIUM for 4 minutes, stirring twice. Combine both mixture and reheat on LOW for 2 minutes. Serve hot with crackers, chips or fresh fruit wedges. makes 3 cups dip.

Grilled Good Karma Curried Wings

These grilled wings are sure to please your guests and their souls. They are exotic and unique, yet delicious! Try them the next time you have a cookout and see what a hit they will be.

~ 2-3 pounds of chicken wings, tips removed
~ 1/3 cup honey
~ 1/4 cup butter
~ 1/2 teaspoon mustard powder
~ 2 teaspoons curry powder
~ 3 teaspoons Carrot Karma Hot Sauce
~ 2 cloves garlic, minced
~ 1 teaspoon salt
~ 1/2 cup olive oil

Place wings in a resealable plastic bag. Combine remaining ingredients. Pour mixture into bag with wings, coat well, seal bag, and allow to marinate in refrigerator for 2-4 hours. Preheat grill for direct medium heat.

PB & Chai Chipolte Chicken Skewers *forget pb & j*s between classes*

~ 3 teaspoons chai chipotle
~ 1/3 cup hot water
~ 1/3 cup teriyaki bbq sauce
~ 1/3 cup peanut butter of choice
~ 1/3 cup chopped cilantro
~ 1/4 cup soy sauce
~ 2 tbs grey poupon honey dijon
~ 1 lb chicken tenderloin strips

Mix together marinade – reserve 1/2 for dipping.  Put other half in ziploc w/chicken for 2 – 3 hours, place on skewers, and grill till perfection!  whoooo hoooo this is an A plus!

BBQ Hot Cubed Shrimp- *this is a university favorite!

~ 3 tbs hot cubed
~ 6lbs shrimp unpeeled med fresh
~ 1/2 cup butter
~ 1/4 cup worcestshire
~ 1/4 cup lemon juice
~ 1 tbs old bay
~ 1 tbs pepper
~ 3 cloves garlic minced
~ 1 tbs cajun seasoning
Mix sauce, toss, bake at 350 for 15-20min in roasting pan, and serve.

Curried Calamities
  • 2 dz  ‘lilneck clams
  • 2 cloves minced fresh Gaahlic
  • a couple skirts of fresh lemon juice
  • 1/2 cup of Chai Curry ‘Chup
All Shucks da clams!  Mix all above.  Sauce up da clams!  Roast dem good for 10-12 min at 350, don’t cook them too long or they’ll be sweatin!
Serve hot, and steamy and spicy!
