Preheat oven 350, In a saucepan over medium heat on the stove, bring the stock & sherry to a boil. Add the saffron and salt. Turn off the heat and let the saffron steep for at least 15 minutes.
In a 12- to 14-inch stainless steel skillet or cast iron pan, heat the oil over medium heat on top of the stove. Add the onion, Sofrito sauce & garlic goodness sauce and cook for 5 to 7 minutes, or until the onion is translucent. Stir in the chorizo and break it up. Continue cooking until chorizo is no longer pink.
Add the rice, and cook, stirring often, for 4 to 5 minutes, or until the rice is coated with oil and lightly toasted.
Stir in the stock, fire roasted tomatoes, and peas.
Cover and simmer the rice without stirring for 15 minutes, or until the rice absorbs most of the stock. If the mixture looks dry, pour about 1 cup of hot water over it, but do not stir.
Nestle the seafood into the rice.
Cover the pan with foil, bake in the oven for 15-20 minutes longer or until the rice and seafood are both cooked through. Taste the rice to make certain its soft & tender. If not cook 5 more minutes.
Sprinkle with parsley and serve hot & saucy! I served mine with Carrot Karma!

1. Preheat oven to 350˚F.
2. Place a large skillet over medium/high. Add diced onion then 2 lbs ground beef and break up with a spatula. Sauté over medium/high heat, breaking up the beef and cook just until cooked through then remove from heat.
3. Tilt skillet to spoon off and discard excess fat. Stir in mayo, Chai Chipotle Chup, and Honey Hype Spice.
4. Cut buns in half. Place bottom half of dinner rolls on cookie sheet. Add 1/2 of your fav cheese on the bottom. Spread ground beef mixture evenly, using the back of a spatula to square off the edges. Cover with remaining cheese.
5. Place the top of buns, cut-side down, over the burgers. Brush tops with the melted butter and immediately sprinkle with sesame seeds and additional Honey Hype Spice. Bake at 350˚F for 15 minutes until the tops are golden brown. Serve hot! This recipe is easy to cut in half to for a smaller group.
